The GTX 560 Ti is becoming outdated with every new graphics card release. You could get a GTX 580 for the same price of two GTX 560 ti's and get amazing performance.
You don't need two screens, it's a waste of money. Just get a 30" TV and hook an HDMI cord to it and you are good to go.
As for the case, you should get a Cooler Master, they make amazing cases that keep out dust and cool your system very well. I have the Cooler Master Storm Scout. $80
